Gilberto Mendez, along with his brother Gabino and nephew Francisco, produce coffee across an entire mountainside in Northwest Huehuetenango. The family operates like a mini co-op, sharing their successes and failures year after year in a much more detailed and transparent way than what is common practice. Each family member focuses on different aspects of the process; Gabino keeps up with processing and varietal advances, Gilberto focuses on structural and equipment improvements to the farm, and Francisco provides the best water from ground springs.
This coffee tastes super crisp and clean as a result of this year’s improvements made to washing channels on the family’s main wet mill. While it is our first year buying this coffee, Gabino insists that the resulting cup is also due to long term effects of choosing to use Chalum shade over Gravilea trees, which leads to less acidic soil with more readily available biodegrade nutrients.
