More than 100 years ago, Don Pio Romero Bosque, a prominent politician at the time, began coffee production in 3 of his farms: Milan, Las Marias, and El Pinar. In 1980, due to the expropriation of large estates as part of an agrarian reform in the country, the inheritors of Don Pio lost El Pinar. In the following years, and as a result of a civil conflict, most farms were abandoned or worked very little. Guerilla attacks on farms, processing plants, and infrastructure undermined efficiency, precluded investment, and intimidated labors. In 2011 a new administration acquires the farm, and with a different work program starts the partial renewal of the old coffee plantation. New coffee varieties such a Catuai, Villa Sarchi and Marsellesa, were introduced, keeping the traditional Bourbon variety.

The farm, located between 1,150 and 1,500 MAMSL, was awarded with the Cup of Excellence in 2014, the most prestigious competition and award for high quality coffees. The farm is Rainforest Alliance Certified, and has built houses for the workers and their families, as well as a school, daycare, and a medical clinic.
Anaerobic process is when coffee cherries are placed inside a tank completely deprived of oxygen. This particular fermentation process can be applied to coffees that are washed or natural, and creates a profile with strong wine/fruity notes.
